Enchilada Wednesday...
Made a batch of chicken enchiladas today....it's been so long since I made tortillas from scratch.....but they are well worth the trouble.
I guess the recent mass immigration of Mexicans to our area caused the grocers around here to stock ethnic ingredients (like Masa Harina) for which I am grateful.
Oh, for dessert, I baked Mississippi Mud Cake from the Southern Living Magazine, June, 2004 edition. To die for.
If anyone wants that recipe, I'll post it.

Kendall College Visit
While in Chicago, ProStart teachers were invited to an awards luncheon at Kendall College.
The tasting buffet they had for us was not only well-presented, but also delicious.
Here are some bruschetta, grapes wrapped in bleu cheese and pistachios, and marinated mussels.
